By Melissa TosettiNo matter what the groundhog says on February 2nd when he peeps out of his hole amid the media frenzy, spring officially starts on March 20th at 6:29 pm EST.That means there are seven more weeks to use as an excuse to make delicious homemade soups, stews and winter type meals using your slow cooker.There’s nothing like walking in the door on a cold, blustery day to the smell of dinner that is ready to enjoy.Use your slow cooker one or two times a week and you’ll save time, money and the mental clutter of trying to figure out "what's for dinner" at the last minute.One of my favorite resources for slow cooker meal ideas comes from Stephanie O’Dea, the creator of the blog A Year of Slow Cooking.Stephanie’s blog is based on her 2008 New Year Resolution, to use her slow cooker once a day for a year.  Little did she know it would lead to multiple book deals, a New York Times bestseller and dozens of media appearances.While you don’t need to resolve to use your slow cooker every day, using it just once a week will ease your meal making burden.
